Joseph Lenn , executive chef of Blackberry Farm ’s dining venue The Barn , says the key to cooking butter beans is to permit them chill in their cooking liquidness ; otherwise they ’ll become dry and farinaceous . One of his favorite way to prepare the beans is to cook them with herb and vegetables , cast away them in a vinaigrette , and serve alongside grill duck chest . He shares his recipe here .
For the marinade:½ loving cup Italian flat - leaf Petroselinum crispum leaves ( chopped)¼ loving cup chives ( finely sliced)¼ cup basil ( finely sliced)¼ cup soften shallots½ cup sherry vinegar1 cup extra virgin European olive tree oilCombine all ingredients and let them instill for at least two hours .
