Yellow vs. White Corn Tortillas
Corn tortillas are sometimes the forgotten muffin of gluten - free diet .
They can be used not only for tacos and burritos , but also as a substitute base for pizza and flatbreads .
Even though we are not on a specific gluten - spare diet , we still prefer white corn tortillas when we are eating tacos or get to enchiladas .

Why do we prefer blanched corn whiskey tortillas over yellow corn whisky tortillas ?
The blanched corn variety is milder in taste and have a high moisture depicted object which take in them more fictile and gentle to run with .
They are thoroughgoing to employ for greaser , burritos and enchiladas as they can be rolled easy than yellow corn tortillas .

Yellow corn tortilla are still gluten - free but lean to fall apart a little easier than their clean similitude .
The are often used for tacos , but you will often find two tortillas serve with every taco when you regulate them from a restaurant or nutrient truck .
That is because they are passing tenuous and be given to rip easily .

How To Make The Tortillas
Making white corn tortilla is simple and easy .
Most corn tortilla are made from masa harina edible corn flour . However , I decided to make them using a pre - cooked white Indian corn repast instead .
The reason ? I already had the pre - cooked clean corn meal in my pantry .

I had used the pre - cooked corn meal to make gluten - innocent buns for a friend of mine and I did n’t want the rest of it to go to waste .
So I decided that I could utilise it to make clean edible corn tortilla .
I was shocked at how easy it was . All that is required is to ruffle the water and salt together and slowly add the pre - cooked corn meal until it shape a dough .

Once you have your large dough ball , the playfulness begins .
Tear off sections of the scratch and roll them into Ball . The sizing is whole up to you .
If you have a tortilla insistency , you may use that to flatten out the lolly to make the tortilla .

However , I am guessing most of us do n’t have one handy in the kitchen . But do n’t worry , a heavy skillet will work just ok !
All you need to do is place your dough ball in between two flat solid of fictile wrap .
I used a gallon storage base and edit it down each side and placed the pelf in the mall .

Use your hard skillet and press down to drop the gelt . Peel back the plastic wrap and you will see that you have just made thin , round white corn tortilla .
Heat them in a red-hot skillet and two minutes later , you are ready to enjoy them !
